Yea yea yea I know, It’s the same thing we hear every year , “I want to lose weight” “I want to get healthy”. Trust me i know. I sing that song every year and I am one of those people who start off well but crash after the first major event comes up.
A week ago I sat in my room and was thinking to myself, am I happy where I’m at? I mean sure I have an amazing husband, two beautiful kids (who drives me crazy on the daily) and overall good health but am I really happy? Seems like a stupid question but I’ve always been a person to set goals. One of my goals was to feel like the best version of me by the time I turn 30 (just about 3 Months away), I want to feel good about myself both inside and out.
So yes, once again, I am going to be that person who sets those goals, because why not?
This week I decided to venture out and try something new. Spaghetti Squash!! I’ve been back and forth on trying this for months now but I finally gave in and gave it a try. I must say, it is so delicious and what an awesome alternative to pasta. It’s also a good low carb option. Anywa, here’s how I made it.
So first things first, preheat your oven for 400F. Cut your Spaghetti Squash in half and clean out the seeds:
Next, you’ll want to add a little flavour to your squash by brushing it with some olive oil and sprinkle a little salt and pepper (clearly I have some issues cutting my squash):
Spray a baking sheet with non-stick spray and place the squash face down. Now we’re ready to throw these babies into the oven for 30-50mins, depending on the size of your squash. Once they’re out of the oven, you’ll want to start scraping it almost immediately. Use an oven mit for better grip to get a good scrape.
Right away you will see the strands of “spaghetti” appear. Keep scraping until you’re basically just left with the skin of the squash. You’ll end up with a bowl of this:
From here, you’re free to run your imagination wild. A yummy stir fry, or some marinara sauce would be delicious with this. I meal prepped earlier this week some ground turkey, so I made some sort of version of a “Spaghetti Bolognese”. Well whatever you want to call it, it tasted delicious!!!
