Sneaky Healthy Muffins

Going healthy wasn’t only a choice for myself but for my kids as well. Both my kids are EXTREMELY picky eaters. They practically turn their heads to almost all fruits and vegetables so I needed to get real creative with this one.

I had found a recipe on Pinterest to hide healthy items in an oatmeal muffin but you can still taste certain things in it and that was not going to fly with my daughter. She can sniff a fruit or veggie from a mile away. After altering the recipe I had found and making a few tweaks, I came up with a pretty good alternative. Might I add, there is NO added sugar…BONUS!!!!

First things first as usual, preheat your oven to 350F and grease your cupcake pan. Here’s what you’ll need:

The sweetness of the muffin will come from the natural sugars of the banana and the apple sauce. Keep in mind the measurement for the apple sauce is 1 Measuring cup which is the equivalent to 2 pre-packaged apple sauce cups (like in the picture).

Add your flour, oats, baking powder and baking soda to a mixing bowl and stir together with a spoon:i14VdobmS3a1OY4aYvA7oQ_thumb_1737.jpg

In a separate bowl, mash your avocado and bananas until it looks like a gross mush (I promise it will taste way better than this looks lol):

Now you’re going to add the rest of your wet ingredients. Mix the egg, milk and apple sauce to your avocado and banana mixture and mix until it’s all combined. You should have a consistency to baby food:

Once you have combined all your wet ingredients, you are now going to add it to your dry ingredient mix. You only want to mix to combine. Do not over mix.A5tNAwM7Rcqx69NzGK8crA_thumb_1732.jpg

I used an ice scream scoop to measure out the muffins. I was able to get enough to make 12 pieces. I used cupcake holders BUT I recommend just greasing the pan and scooping the mixture straight into the pan. This oatmeal mix sticks to the cupcake holders and things end up in a hot mess really quickly!WX7BD1EdQIyIOgLSBIJh1Q_thumb_1730.jpg

Bake for 25-35 mins in the oven. I used a pick to check on them. To be honest, everyone’s oven operates differently, so I don’t really pay attention to the cook time on recipes. I just check on it every so often. But in this recipe, 25-35 mins should do it!

This is a great muffin to introduce to your kiddo’s who are being introduced to solids or even for your kids to take to school for snack. As an adult, they taste pretty delicious for no sugar added!
