Here’s another sneaky way I came up with to hide veggies for my kids. Pasta sauce! It can be used in a variety of different things like pizza, pasta or even as a dip for some garlic bread sticks (yum!). Whatever you choose, your kids won’t even know there was veggies in the sauce and will eat every last bite on their plate.
I used the sauce to make Pizza Rolls. You can use any veggie combination that works for you and your kids but here’s what I used to make the sauce:
- 1 jar of Pasta Sauce (use whichever brand your kids like and try to use the original version of that brand)
- 1 Zucchini
- 1 Bag of Baby Spinach
- 1 Container of Mushrooms
Cut up the mushrooms and the zucchini. Add all your veggies to a pan and cook just until they start to sweat. You want the water to release from the veggies to create a little steam. We are not going to be adding any additional flavour to the veggies because the flavour will come from the pasta sauce.
As soon as the spinach had melted and the hardest vegetable in your pan has softened, take the pan off the heat. You should have something like this:
Grab a sauce pan and empty your jar of pasta sauce and get it warming up. I would start of on Medium-High. Now we need to blend the veggies to a fine sauce. You can do this one of two ways. The first way is to blend your veggies first in a blender and then add it to the pasta sauce or add the veggies to the pasta sauce and then use a hand blender to mix everything together. I chose the second option because that’s what I had closest to me lol.
After everything is nice and blended, let it sit on a simmer for 20-30 mins. When your time is up, your sauce should look something like this:
Phew! Now that the hard part is over, let’s get to the yummy part! The Pizza Rolls ups tasted so good that my hubby ate almost half of the roll up! This can be a great family fun night dinner. Here’s what you’ll need for the roll ups:
- Pizza Dough (I used the ready to go Pillsbury pizza dough)
- 1/4C of the freshly made veggie sauce
- 1/2C of mozzarella cheese (or slightly more if you REALLY love cheese!!)
- 1tbs of butter
First things first!!! Preheat your oven to 350F. Grab a sheet pan and grease your pan with butter. This just prevents the dough from sticking and also adding a little layer of flavour to the dough. Roll your dough out onto your sheet pan and add sauce to your dough. Sprinkle the cheese evenly all over.
Try not to put the cheese right to the edges so when you roll it the cheese wont ooze out when it’s baking. Start rolling the dough on the longest side so you can ensure that the dough will cook through. If you have some italian seasoning, sprinkling some would add some great flavour!
Now let’s bake this baby! We’ll be eating soon I promise, we’re almost at the finish line. We’re going to throw this in the oven for about 25-30 mins. Until the top is nice and golden brown. How yummy does this look?
If you don’t mind cheese oozing and gooing out then go ahead and cut it up and serve. I like when the cheese sets just a little bit so I let the roll sit for 10-15 mins just to firm up a little bit. Time to slice this baby up and enjoy!
