Being on this healthy tip has me trying to get creative with our meals. I like meals that are super quick and simple to do. This yummy bowl took me 10 minutes to put together. Here’s what you’ll need:
Step One: Cut up your chicken breast into cubes. Add your Chicken Seasoning (I use the Club House brand with no salt added), garlic and salt. Mix everything up and set aside.
Step Two: Prepare your brown rice. This can be your longest step or shortest step. If you prefer to buy a bag of brown rice and boil it yourself then go right ahead. Again, I like saving time so I use the good old Uncle Ben’s lol. Pop it in the microwave and you’ve got perfectly cooked brown rice in 90 seconds.
Step Three: On Medium High, heat up your pan and add some cooking spray. Once it’s warmed up, add your chicken and stir until it’s almost cooked all the way. Just before the chicken is finished, add your bean medley (I just used a no salt added canned Bean Medley from Wal-Mart). Mix it up and let the chicken and beans sit for a few minutes so the beans can soften just a little bit. At the last 1-2 minutes, add your brown rice in and combine everything together. Taste to see that the salt is where you want it to be
When it’s all done you will have enough for two portions. Share with your spouse or put it away and have lunch ready to go for tomorrow! I didn’t have any avocado’s when I made this but adding some avocado on top would taste super delicious too!
