Here’s another quick and simple recipe for you guys! I’ve tried and tried to do healthy diet meal plans and I just can’t deal with bland food. My family is West Indian and we just don’t do bland food. So I came across a recipe for Chicken Teriyaki from the Weight Watchers program on Pinterest and tweaked it to my suiting.
Here’s what you’ll need:
Step One: Heat up your saute pan on medium high and coat with cooking spray. Add your garlic and cook for about 1 minute. Add your chicken and stir fry for about 5 minutes, until the chicken is brown all around.
Step Two: Once the chicken has browned, add the green onion and veggies. I used broccoli and cauliflower but feel free to use whichever veggie you like. I also went the frozen veggie route strictly for your convenience. If you have fresh veggies on hand than even better! Cook until your veggies soften a little bit.
Step Three: After the veggies have softened a little bit, add your chicken broth and teriyaki sauce and simmer for about 5 minutes or until your chicken is fully cooked through. You want your sauce to reduced slightly.
Step Four: Next step is to serve and enjoy. If you’re trying to cut back on carb intake, then you can enjoy it just as is. Otherwise, this would taste great with steamed rice or you can add a little bit of noodles just before removing it from the stove. The portion’s I have cooked are for 2 servings.
