I love love love a good chicken parm. Unfortunately it’s not always so healthy to have too often. I came up with a version that’s healthier. By baking it in the oven, you avoid all the extra added oil and greasiness (if that’s even a word lol). This was a hit for family dinner.
Here’s what you’ll need:
First things first, preheat your oven to 350F. Cut each chicken breast into halves and use a meat tenderizer to flatten it out a little bit. In a separate container add your dry ingredients. Mix the bread crumbs, italiano seasoning mix and the 4tbs portion of parmesan cheese.
Dip each half of the chicken into the egg mixture and then into the dry mix. Coat each piece evenly and lay each piece in a baking dish that has been coated with cooking spray.
Bake in the oven for 30 minutes, then remove from the oven. sprinkle the other portion of parmesan cheese all over the cutlets. Then add the marinara sauce over each piece and finally sprinkle with mozzarella cheese. Switch your oven to broil and let it sit until the cheese has melted and gets all bubbly and browned a little.
And there you have it! Tasty and delicious chicken parm that is oven baked. If you want to kick this one up a bit, add some sauce all over the chicken and make some spaghetti to go with it.
