Turkey Lettuce Taco

Trying to stay strong with our healthy eating (trying being the key word here). I came up with my own take on a turkey lettuce taco. They take next to no time to whip up and you can meal prep this one in advance so your lunch/dinner is ready to go for the next few days.

Here’s what you’ll need:

A couple of notes about the ingredients. First, the green seasoning. This is a West Indian ingredient and may not be available to alot of people. You may find it in your grocery store if you have a West Indian or Caribbean section, if not, it’s completely optional and not necessary to your dish. The other ingredient that adds great flavour is regular white onion. I have to omit this from my recipe because hubby despise’s it but it would work  really well.

To your turkey, add the cajun season, italiano season, salt, pepper and green seasoning (if you are using it) and mix everything until well incorporated. Once everything has been mixed in, add about 2-3tbsp of chopped green onions.

Give it one more mix. I’ve mentioned before but to me the best tools for mixing are my hands (cleaned of course). If you get grossed out or just don’t like to just use whatever utensil you’d like.

Next you want to heat up your skillet on medium high and spray all around with your cooking spray. Add your garlic to the pan and let it sautee until lightly browned. Add your turkey and spread all along the bottom of the pan. Once you’ve covered the bottom of the pan, do not touch it for about 2-3 minutes. Leaving the turkey in the pan untouched allows browning on the meat to happen. Colour on your meat means flavour!! Keep stiring occasionally until meat is cooked through. Near the end, taste your turkey and make any salt adjustments that you may need.

Just like that your turkey is done and ready to go! Grab your Romaine hearts and rip a couple of pieces off. I leave the ends on because they make great handles when holding your taco to eat. You can use any dip you like or prefer but I love using  sweet chilli sauce drizzled over the turkey. It tastes super yummy and adds a little spice to your taco.

There you have it! Quick, easy and delicious turkey lettuce tacos. The best part is that the prepared turkey is so versatile. You can add some sauce and add it with your favourite pasta or even use my easy Baked Spaghetti Squash recipe. Anyway you make it, you won’t be disappointed!
