Grilled Cheese Roll-Ups

I am working on getting my daughter to eat more healthier things and being open to trying new things and I don’t know about anyone else’s kids but that has been proven to be extremely difficult. We are getting there SLOWLY, but surely.

Like her mom, my girl loves grilled cheese sandwiches and I came up with a way that makes having a yummy grilled cheese that doesn’t allow the bread to get soggy and still stay delicious by the time it’s your kids’ lunch time at school.

It takes no more than 5-10 minutes and only three ingredients!! I don’t know about you but that works for me. Here’s what you’ll need:

First thing you’re going to need to do is cut the edges off the slices of your bread. Once the crust has been cut off, you will need to flatten each bread slice. You can use a rolling pin or anything flat to roll out he bread (TBH, I just used a cup from the cupboard that had no patterns on it lol). Should look something like this:

Before moving on, you’ll want to put your griddle pan to start warming up on the stove on Medium-High. If you don’t have a griddle pan, that’s okay, any normal non-stick pan will work.

Next, you’re going to take each piece of rolled out sliced bread and spread both sides with the butter/margarine or whatever you use. Lay your sliced cheese on the bread and line it up with the edge that is the widest. If you’re bread slice is too small, you’ll need to trim the end of the cheese. You can add the extra piece on top of the other piece of cheese or just discard it (I use it at the top).

When you roll the bread, the cheese does shift down a little bit so you’ll need about an inch or so left on the end. This is also so that the cheese doesn’t ooze out when you grill it. Here’s what it’ll look like when it’s rolled up:

We’re all set and ready for these to get all toasty and gooey! Place each roll on the griddle/pan with the open-end face down. It will kind of mesh together and toast it so that the bread sort of seals. Flip them as they turn a nice golden brown or however light or dark you like it.

And voila! There you have some super easy grilled cheese roll-ups. Whether you want to make it for lunch or a quick after school snack, these are a great option and also a fun spin on regular grilled cheese.
